Salt Crusted Snapper

I was going to blog about this back when I made the Salt Crusted Snapper, but I forgot to take an after picture etc so I never got to it. Well here it is...The before picture...I mean before it was baked but after I put the salt mixture all over it. I saw this on a show once and always wanted to try it. I didn't have the ingredients to follow the recipe exactly but it came out okay. I probably won't do it again...the recipe called for 4 egg whites and 1/4 cup of salt to make the mixture for the crust...that meant that I either had to throw away 4 egg yolks or find a recipe to use them. Well, I chose to find a recipe to use them. I found one called a Peach Cream Tart and it was SO yummy. You can find both of these recipes on the FoodNetwork website. Anyway...as for the Fish it was good and very tender (the salt mixture crusts over and the fish steams in its own juices) however it was saltier than I would have liked, even though the recipe said it wouldn't be. Maybe it would have been better had I had all the ingredients. I would rate it a 5 out of 10. It was just average. The Peach Cream Tart on the other hand would have to rate around 9! It better rate that high...one piece (1/6 of the whole thing) is over 200 calories!
